Datatables - responsive table working differently on IE 11 and Chrome

I have a table on which I'm using datatables with the responsive plug-in. I'm not setting any widths on the table or table rows/cells. In Chrome the table works fine, i.e. the columns all appear on one line when the screen width allows. However, the same table with the same data on the same monitor will overflow one of the columns onto a second line when using Internet Explorer 11.

This is happening consistently with multiple tables on my site.

Any ideas what could be causing this?

Just to add, if I remove the responsive option from the table, all the columns appear on one row, with no table/cell scrolling/wrapping.
