Server-side script installation

I'm loving the product but finding it difficult to install a server-side scripting.

I am trying to integrate "https://editor.datatables.net/examples/dates/dates.html" into my site. I do not understand why the Server-side example code opens with a PHP tag but never closes and the Javascript example does not contain the "serverSide: true" reference.

I have looked at "https://datatables.net/reference/option/serverSide" and am still unable to decipher what I am supposed to be doing.
