Hello Forum!
I am in doubt who to ask, if it is a datatables related question or a stackoverflow, but i will give it a try, could be someone knows the answer anyhow.
When i run my local project in iis(chrome) from visual studio, everything looks fine, but after i published my website to my host, it looks almost identical, except it does not store my date correctly anymore and therefore does not sort it correctly.

You haven't provided much info but I would start by comparing the date format sent from your local host versus the webserver. I would look at the JSON response in the browser's developer tools using the network tab.
